Much safer for diabetics, the graham cracker crust doesn't involve sugar addition!
Crust:
- 1 package of Graham crackers, processed
- 1 tsp cinnamon
- 5 tbsp melted, cooled butter
Mix together and press into a pie pan, chill
The Filling:
- 2 eggs
- 2 cups fat free or 1% milk
- 1 tsp salt
- 2 tbsp flour (generous tbsp)
- 2 tbsp sugar substitute
Whisk together all of the above and cook over medium-low heat until thickened.
- Add in 1 tsp vanilla extract
- 2 cups unsweetened coconut
Stir together until all is thickened and remove from heat
- Mix in and pour into crust and chill 10-20 minutes or for 1 hour, covered with wrap
- Remove and put cooled, toasted coconut on top
- return to the fridge, covered and chill over night
The next day whip up some whipping cream and top the pie!
