This is safer for diabetics! After slicing, toast in a dry pan and serve with sliced banana or a little lower cal whipping cream.
- 1/3 cup low fat yogurt
- 2 large eggs
- 1/2 tsp vanilla
- 4 ripe mashed bananas
- 1/4 stick melted, cooled butter
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 3/4 tsp baking soda
- 3/4 tsp salt
- 1/2 tsp cinnamon
- zest of one large orange
- Preheat oven to 350 degrees
- Pour into prepared loaf pan
- Bake 45-50 minutes
- Allow to cool before removing
