Memaws Mashed Potato Cauliflower

 I love smashed potatoes but they don't really love me back! But I'm not overly keen on the flavor of cauliflower either. Still, I need to watch those carbs. So I developed my version of the popular mashed potato cauliflower dish.

  • 1 head of cauliflower, cut down and stems removed to only florets are present
  • 1 small yellow or russet potato (around 3" circumference)
  • 1/4 cup sour cream (lite is ok)
  • 1/4 cup neufchatel cheese
  • 2 tbsp butter or margarine

  1. Chop the cauliflower into small pieces 
  2. Cut the potato up into small pieces
  3. Place both in a mircrowave bowl, add in 1/4 cup water and cover
  4. Cook at 2 minute intervals until fork tender
  5. Remove to tee towel and give it a squeeze until no water runs out
  6. Place in processor with the cheese, sour cream and margarine and pulse to kind of smooth (don't pulse to mush!)
  7. Add salt and pepper and mix by hand.
