This recipe serves 12 people so it would be good for a potluck or for freezing for a later meal. Noodles, for the most part, need to be consumed lightly. I can recommend some products to sub: Carbanada and ZenB which, while not very low carb, also contain lots of fiber.
- 8 oz dry noodles (flat would be best) *
- 1 lb ground beef (go lean or even replace with turkey!)
- 1 medium chopped onion
- 1 medium chopped bell pepper
- 1/4 tsp black pepper
- 8 oz canned diced tomato, no salt added
- 1/2 ln shredded cheddar cheese (for lower sodium use either Mozzarella fresh or Swiss cheese from the block)
- Cook the noodles to al dente, drain, and set aside.
- Brown the burger, onion, and bell pepper together and drain off excess.
- Add in the spices and tomato and mix well.
- Add in 1/2 of the cheese and mix well.
- Place in a large casserole and top with remaining cheese.
- Bake at 350 for 45 minutes.
