Beef and Noodle Casserole

 This recipe serves 12 people so it would be good for a potluck or for freezing for a later meal. Noodles, for the most part, need to be consumed lightly. I can recommend some products to sub: Carbanada and ZenB which, while not very low carb, also contain lots of fiber.

  • 8 oz dry noodles (flat would be best) *
  • 1 lb ground beef (go lean or even replace with turkey!)
  • 1 medium chopped onion
  • 1 medium chopped bell pepper
  • 1/4 tsp black pepper
  • 8 oz canned diced tomato, no salt added
  • 1/2 ln shredded cheddar cheese (for lower sodium use either Mozzarella fresh or Swiss cheese from the block)

  1. Cook the noodles to al dente, drain, and set aside.
  2. Brown the burger, onion, and bell pepper together and drain off excess.
  3. Add in the spices and tomato and mix well.
  4. Add in 1/2 of the cheese and mix well.
  5. Place in a large casserole and top with remaining cheese.
  6. Bake at 350 for 45 minutes.
