This makes a very nice dish for a Sunday meal. While my Mom wasn't a big one for casseroles, there were some times when she would make something for us that was casserole-ish and this was one of them. I think she liked it because it was not only easy, she could use up an entire chicken in the making of it (she didn't use the breasts alone, but rather, the whole chicken). A side of herbed flat noodles and peas rounded out the meal.
- 1/2 cup flour
- 1 1/2 tsp salt
- 1 1/2 cups water
- 1/4 tsp herbs de Provence
- 1/2 cup dry milk powder
- 1 lb chicken breasts
- 1/4 cup REAL butter, unsalted
- Spray the dish.
- Dip chicken in water and coat with the flour and seasonings
- Place in baking dish
- Cut butter into small cubes and scatter over the chicken
- Bake at 350 for 15 minutes
- Combine the powdered milk and hot water and pour all around the chicken and over the chicken
- Bake another 30-40 minutes or until the chicken's internal temperature is 165.
