Simple Italian Lunch

This recipe only requires you to cook the pasta and that makes it very easy! But if you want to make a large batch, do so and freeze them down as prep meals. Veggie should be a light salad on the side, in a different container of course.

  • 3 oz precooked pasta (you can buy this at the grocery Barilla makes it)*
  • 1 cup pasta sauce (look for lower sodium or no salt added products)
  • 4 meatballs per person (you can either make these yourself or buy pre-cooked ones)

Put the precooked pasta on the smaller side of your prep container and the meatballs in 1/3 cup sauce on the other. Pack up a little container of parmesan cheese and you're good to go!

* It will be more expensive to use this product and it will be higher in sodium than if you make your own pasta. I suggest making a batch of your favorite pasta, cooking it to almost al dente, draining and cooling in cold water. Then drain it very well and packing down in 100 calorie (usually1/2 cup) amounts. Vacuum sealing is best for this. You can freeze it or, vacuum sealed, it will last in the fridge for several weeks. Just make sure NOT to overcook! It should be cooked but toothsome.
