Mexican Chicken Bowl

This is a very simple dish because you'll be using pre-cooked chicken. Now, I buy the rotisserie chicken from SAMS because whole, and cooked, its still less expensive than a raw whole chicken! And- it tastes good. Just make sure you remove the bone and skin. I stick to the breast though. One breast is plenty!

  • 1 pouch Uncle Bens Ready Rice (plain Basmati)
  • 1/2 large onion, thin sliced 
  • 1/2 each, red and yellow bell pepper, thinly sliced*
  • 1 lime, zest and juice
  • 1 small bunch cilantro
  • 1 tsp EVOO
  • taco seasoning (look for lo-so or make your own)
  • 9 oz (for three people) shredded rotisserie chicken
  • 1/4 cup shredded cheese (go low fat if possible but Swiss cheese is great for loso!)
  • Salsa of choice

  1. In a pan, put the oil and saute the vegetables.
  2. Add in the shredded chicken and heat through
  3. Add enough salsa to your liking.
  4. Set aside.
  5. Heat the rice according to package instructions
  6. In a bowl, add the rice, chopped cilantro, lime juice and the lime zest
  7. Stir until mixed and heat again in the microwave for another 15-20 seconds.
  8. One one side of your bowl, put the meat. 
  9. On the other side (smallest) put the rice.
  10. Tuck in 1 small low-carb wrap!
  11. You can also serve with light sour cream.

* You could use frozen for 2 cups of an onion-bell pepper blend
