Friday Night Sandwich

Yes! This is an older recipe! Dating back to the 60s, this was a luncheon favorite that ladies often enjoyed. Technically you can play fast and loose with this recipe. But I thought I would help people enjoy a healthier version.

  • 5-6 ounces crab meat (you can use artificial crab)
  • 2 finely chopped celery stalks
  • 4 finely chopped green onions
  • 1 small can of mushrooms, drained and chopped
  • 1 tsp caraway seed
  • 3 tbsp light mayonnaise (may also use light sour cream)
  • 8 slices bacon, cooked and crumbled (yes you can use lower sodium)
  • 4 slices of bread
  • 4 slices cheddar cheese (you can replace with swiss to lower sodium)

  1. Toast the bread on one side only
  2. Mix together the crab, celery, onions, mushrooms, caraway seed and mayonnaise.
  3. Spread over the bread on the soft side only.
  4. Crumble the bacon on top followed by the cheese
  5. Place under the broiler until browned.
  6. This makes four servings.
