Yes! This is an older recipe! Dating back to the 60s, this was a luncheon favorite that ladies often enjoyed. Technically you can play fast and loose with this recipe. But I thought I would help people enjoy a healthier version.
- 5-6 ounces crab meat (you can use artificial crab)
- 2 finely chopped celery stalks
- 4 finely chopped green onions
- 1 small can of mushrooms, drained and chopped
- 1 tsp caraway seed
- 3 tbsp light mayonnaise (may also use light sour cream)
- 8 slices bacon, cooked and crumbled (yes you can use lower sodium)
- 4 slices of bread
- 4 slices cheddar cheese (you can replace with swiss to lower sodium)
- Toast the bread on one side only
- Mix together the crab, celery, onions, mushrooms, caraway seed and mayonnaise.
- Spread over the bread on the soft side only.
- Crumble the bacon on top followed by the cheese
- Place under the broiler until browned.
- This makes four servings.
