Lunchtime pizza boats

 This makes 4 servings

  • 2 bell peppers, halved and seeded
  • 1/4 cup sugar-free pizza sauce
  • 1 cups shredded mozzarella or pizza blend cheese 
  • 8 slices pepperoni 

  1. Preheat oven to 350 °F
  2. Place the cut peppers cut side up on the baking sheet.
  3. Divide the sauce between the peppers, and then top with shredded cheese.
  4. Top with pepperoni or other desired toppings.
  5. Bake for 10-15 minutes until the cheese is bubbly. 
  6. These peppers are best when served immediately.
  7. Add any pizza toppings you enjoy
