This makes 12 servings BUT you can cut it back and use it for a finger food lunch! A few veggies on the side with hummus to dip, some fruit, maybe some cheese!
- 6 hard-boiled eggs, peeled and cut in half lengthwise [3]
- 3 tablespoons light mayonnaise [1.5]
- 1 tablespoon sweet pickle relish, patted dry [1/2]
- 1 tablespoon Dijon mustard [1/2]
- Paprika for sprinkling
- Remove the yolks and mash up well
- Mix in your relish
- Mix in the mustard and mayonnaise
- Chill, covered with plastic
- Sprinkle with paprika just before serving.
