Chicken, Pumpkin and Chickpea Stew

It doesn't get any easier!

  • 12 oz chicken breast cut in thin strips
  • 1 1/2 cup pumpkin puree
  • 2 cups rinsed and drained chickpeas
  • 3 cups of mushrooms
  • 1 1/2 cups chicken broth
  • 1 1/2 cups nonfat plain Greek yogurt
  • salt and pepper to taste
  • cinnamon

Add everything to the slow cooker and cook on high for 3-4 hours or low for 6-8 hours.

Serve with cinnamon sprinkled on top
