This recipe serves 4 people and you can make it up the night before to bake up in the morning! Or make it one day and serve the next.
- 3 large eggs
- 2 ounces light margarine
- 1/4 pound low-fat cheddar cheese
- 3 tablespoons flour
- 1 pounds of nonfat cottage cheese
- 5 oz frozen, chopped broccoli (thawed)
- 1/2 teaspoon salt
- 1/2 dash black pepper
- 1/2 dash paprika (optional)
- 2 oz chopped pimento (optional)
- 1/4 cup sliced mushrooms, fresh or canned (optional)
- Preheat oven to 350 degrees.
- Combine all ingredients.
- Spray 2-quart casserole dish with cooking spray.
- Place combined ingredients in prepared pan and bake for 90 minutes.
- Serve hot.
