- 1 large spaghetti squash
- 1 onion, diced
- 1 lb ground turkey
- 24 oz jar of pasta sauce
- 1 1/2 cups shredded mozzarella cheese
- 2 tbsp avocado oil (or oil of your choosing)
- Salt and pepper, to taste
To prepare the squash:
- Poke holes throughout the spaghetti squash with a sharp knife.
- Microwave spaghetti squash for about 10 minutes (cooking time may vary by size of the spaghetti squash and microwave settings).
- Carefully remove the squash from the microwave. Caution: It will be very hot!
- Slice squash in half and remove any seeds.
- Shred strands of spaghetti squash with a fork.
To prepare the meat sauce:
- In a large skillet over medium heat, add the avocado oil until warm.
- Add in onion and cook until translucent.
- Add ground turkey and cook until no longer pink.
- Ground turkey temperature should reach 165F.
- Pour in pasta sauce and stir to combine.
- Combine the spaghetti squash with the prepared meat sauce.
To prepare the baked pasta:
- Preheat oven to 375F. Spray a 9x13 casserole dish with cooking spray.
- Pour the spaghetti squash with meat sauce into the pan.
- Spread out evenly.
- Top with mozzarella cheese and sprinkle with Italian seasoning.
- Bake uncovered for 20 minutes or until cheese is bubbly.
