Picadillo

Picadillo is a ground beef dish made on the stove and simmered to a soft braise. You could easily do this in an instant pot, and frankly, that's what I prefer to do because it takes less time. However, it doesn't let you make your house smell like picadillo so I would suggest making this on top of the stove during the winter if you want to hear "something smells great!" from family and friends! Picadillo can be served over toasted bread, noodles or rice. It's very good over cauliflower rice! 

  • 1/2 large chopped onion
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1/2 green bell pepper, finely chopped
  • 2 tbsp cilantro (fresh is best, if using dry, reduce to 1 tbsp)
  • 1 lb 93% lean ground beef (you could substitute with turkey)
  • 4 oz tomato sauce
  • kosher salt
  • fresh ground pepper
  • 1 tsp ground cumin
  • 1-2 dried bay leaves
  • 2 tbsp pitted green olives with 1 tbsp of the brine

  1. Over medium heat, and with 1 tsp oil, brown the meat.
  2. Add in the onion and garlic and cook until fragrant (about 2 minutes)
  3. Add in the bell pepper and cook for 1 minute more.
  4. Add in the remaining ingredients and place the temperature on low for 2 hours or place in the oven at 300 degrees for 1 hour.

There are a lot of variations on the picadillo and this is the simplest I believe. You can serve this over potatoes, noodles, rice, crusty bread or dip it with some corn chips!
