This makes a nice side dish or a great meatless Monday casserole. If you have trouble digesting corn (though the smaller size of the shoepeg should make it easier) you can omit it entirely or you can substitute it with another type of vegetable that agrees with you.
- 1 can French green beans, drained
- 1 can shoepeg corn [sub suggestions: chopped red bell pepper; chopped broccoli; chopped carrots]
- 1 can cream of celery soup [go Low Salt] or use Memaw's Cream of Anything mix and add in some chopped celery and celery seed
- 1 cup chopped onion
- 1 cup chopped green pepper
- 2 cups sour cream [low fat is ok]
- 1/2 cup grated American or cheese of choice
Mix everything and top with melted margarine and crushed crackers or corn flakes and 1/2 cup slivered almonds
Bake 375 or 45 minutes
