This couldn't be easier and it makes a great "side" or over a meat.
- 1/2 cup finely chopped onions
- 1/2 cup small diced green bell peppers
- 1/2 cup thinly chopped celery
- 6 cups canned, no salt added, tomatoes (chopped or cut)
- 1 tbsp Splenda brown sugar
- 3/4 tsp dry basil or 1/4 tsp chopped fresh basil
- Combine the onion, pepper, and celery with 1 tbsp EVOO and cook to tender.
- Add the rest of the items and cook on high for 3 hours.
