Pizza Topped Chicken Breasts

 Serves four. This dinner meal is easy to make and very tasty! Serve with a side salad and, if its something you can do, a slice of toasty bread!

  • 4 boneless, skinless chicken breasts
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • 16 slices of pepperoni
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

  1.   Preheat your oven to 400°F
  2. Pound the chicken breasts to an even thickness.
  3. Season both sides with salt, pepper, and Italian seasoning.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat.
  5. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  6. Remove the skillet from the heat.
  7. Spread marinara sauce evenly over each chicken breast.
  8. Top with shredded mozzarella cheese and 4 slices of pepperoni per chicken breast.
  9. Transfer the skillet to the preheated oven and bake until the cheese is melted and bubbly, about 10-12 minutes.
  10. Remove from the oven and let rest for a few minutes.
  11. Garnish with fresh basil if desired and serve hot.
