Serves four. This dinner meal is easy to make and very tasty! Serve with a side salad and, if its something you can do, a slice of toasty bread!
- 4 boneless, skinless chicken breasts
- 1 cup marinara sauce (sugar-free)
- 1 cup shredded mozzarella cheese
- 16 slices of pepperoni
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
- Preheat your oven to 400°F
- Pound the chicken breasts to an even thickness.
- Season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
- Remove the skillet from the heat.
- Spread marinara sauce evenly over each chicken breast.
- Top with shredded mozzarella cheese and 4 slices of pepperoni per chicken breast.
- Transfer the skillet to the preheated oven and bake until the cheese is melted and bubbly, about 10-12 minutes.
- Remove from the oven and let rest for a few minutes.
- Garnish with fresh basil if desired and serve hot.
