- 1 lb Italian sausage (mild or spicy, based on your preference
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 medium bell pepper, diced
- 2 cups baby spinach
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tsp Italian seasoning
- Optional garnish: fresh parsley, extra Parmesan cheese
- In a large pot, heat olive oil over medium heat.
- Add the Italian sausage and cook until browned, breaking it into smaller pieces as it cooks.
- Remove the sausage and set aside.
- In the same pot, add the diced onion and bell pepper.
- Sauté until the vegetables are soft, about 5-7 minutes.
- Add the minced garlic and cook for another minute.
- Return the sausage to the pot.
- Add the chicken broth and bring to a boil.
- Reduce heat and let it simmer for 10 minutes.
- Stir in the baby spinach and let it wilt.
- Then, pour in the heavy cream and grated Parmesan cheese, stirring until the cheese is melted and the soup is creamy.
Season with salt, pepper, and Italian seasoning.
