Lemon Pistachio Cake
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 cup butter
- 1 cup sugar
- 4 eggs, separated
- 2 tsp vanilla
- 1 tbsp lemon juice plus zest
- 2 cups ground, unsalted pistachios
- green food coloring
- Sift the flour, soda, powder, and salt together
- Melt the butter partially (leaving some visible) and blend with the sugar until fluffy (creamy) and very light yellow in color.
- Beat in the EGG YOLKS with the sugar and butter
- Add the flour mixture to the wet in batches- it will be very thick.
- Beat the whites to stuff peaks and add in vanilla, lemon juice and zest and fold into the batter a little at a time.
- Add the pistachios and a little food coloring and fold in.
- Bake on parchment lined loaf pan at 350 for around an hour.
