Lemon Pistachio Cake

  • 1 1/2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup butter
  • 1 cup sugar
  • 4 eggs, separated
  • 2 tsp vanilla
  • 1 tbsp lemon juice plus zest
  • 2 cups ground, unsalted pistachios
  • green food coloring

  1. Sift the flour, soda, powder, and salt together
  2. Melt the butter partially (leaving some visible) and blend with the sugar until fluffy (creamy) and very light yellow in color.
  3. Beat in the EGG YOLKS with the sugar and butter 
  4. Add the flour mixture to the wet in batches- it will be very thick.
  5. Beat the whites to stuff peaks and add in vanilla, lemon juice and zest and fold into the batter a little at a time.
  6. Add the pistachios and a little food coloring and fold in.
  7. Bake on parchment lined loaf pan at 350 for around an hour.
