Lemon Custard Filling

This is a wonderful custard on its own but used as a filling its sublime!

  • 4 egg yolks
  • 3 tbsp lemon juice (fresh is best)
  • 1/2 cup sugar
  • 2 tsp lemon rind

  1. Beat the yolks until light and thick and lemon colored
  2. Gradually beat in the sugar, making sure its not grainy (or use caster sugar)
  3. Add in the juice and rind-beating in well
  4. Cook over a double broiler for 5-8 minutes, stirring constantly until thick.
  5. Remove and cool- strain if necessary.
