This is a wonderful custard on its own but used as a filling its sublime!
- 4 egg yolks
- 3 tbsp lemon juice (fresh is best)
- 1/2 cup sugar
- 2 tsp lemon rind
- Beat the yolks until light and thick and lemon colored
- Gradually beat in the sugar, making sure its not grainy (or use caster sugar)
- Add in the juice and rind-beating in well
- Cook over a double broiler for 5-8 minutes, stirring constantly until thick.
- Remove and cool- strain if necessary.
