These are such a delightful cookie! My Mom used to make these for the church lady gatherings at our local church. I was raised Mormon (Church of Jesus Christ of Latter-day Saints) and, back then, the Relief Society ladies had a monthly luncheon. Mom always took one of her famous and popular sweets and this was one the ladies particularly liked. This makes around fifty cookies.
- 2 well-beaten egg yolks
- 1/2 lb sweet unsalted butter
- 3/4 cup confectioner sugar
- 1 tsp vanilla
- 3 cups sifted BREAD flour (sift before measuring)
- 1 cup grated almonds (use ground almonds, NOT almond flour!)
- Beat eggs on medium-high until VERY light in color
- Cream butter for one minute on medium speed and add the sugar, beating again to mix
- Add yolks and beat for 30 seconds on medium speed
- Add almonds and vanilla
- On low speed add flour and increase the speed to medium again
- Scrape down and divide up and roll out on a lightly floured surface and cut into 1/5" squares and shape into crescents.
- Bake for 7-10 minutes at 400 degrees
- Roll in confectioners sugar while warm and again after they cool
