Almond Crescents

 These are such a delightful cookie! My Mom used to make these for the church lady gatherings at our local church. I was raised Mormon (Church of Jesus Christ of Latter-day Saints) and, back then, the Relief Society ladies had a monthly luncheon. Mom always took one of her famous and popular sweets and this was one the ladies particularly liked. This makes around fifty cookies.

  •  2 well-beaten egg yolks
  • 1/2 lb sweet unsalted butter
  • 3/4 cup confectioner sugar
  • 1 tsp vanilla
  • 3 cups sifted BREAD flour (sift before measuring)
  • 1 cup grated almonds (use ground almonds, NOT almond flour!)

  1. Beat eggs on medium-high until VERY light in color
  2. Cream butter for one minute on medium speed and add the sugar, beating again to mix
  3. Add yolks and beat for 30 seconds on medium speed
  4. Add almonds and vanilla
  5. On low speed add flour and increase the speed to medium again
  6. Scrape down and divide up and roll out on a lightly floured surface and cut into 1/5" squares and shape into crescents. 
  7. Bake for 7-10 minutes at 400 degrees
  8. Roll in confectioners sugar while warm and again after they cool
