Fruity Chicken Salad

  •  1 (6-ounce) container of fat-free Greek yogurt
  • ½ cup low-fat cottage cheese
  • ½ cup chopped celery
  • ½ cup diced apple
  • ¼ cup sweetened dried cranberries 
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped pecans
  • ½ tablespoon Dijon mustard
  • 1 ¼ cups cubed, cooked chicken
  • salt and ground black pepper to taste

  1. Add everything together and chill for and hour or two before serving.
  2. Again, you can replace freshly cooked chicken breast with rotisserie.
  3. You could also send your cottage cheese through a processor with the mayonnaise for a smoother salad dressing.
