Classic Luncheon Chicken Salad

A simple salad you'll love to serve over and over.

  • 1 1/2 tbsp Non-fat Greek Yogurt
  • 1 1/2 tbsp light mayonnaise
  • 4 1/2 oz finely chopped chicken breast (you can use skinless, boneless rotisserie chicken)
  • 2 tbsp finely chopped red onion
  • 1 tbsp chopped dried cranberries
  • 1 tbsp chopped pecans or walnuts or almonds

  1. Very easy! Mix everything and serve cold. 
  2. This makes enough for four servings. I serve mine with crackers for some carbs, I suggest using Hint of Salt Ritz crackers.

And yes, you can use canned, drained and rinsed chicken breast.
