Curried Chicken Salad

  • 1 pound cooked chicken breast, chopped
  • 2 stalks celery, chopped
  • ½ cup sliced almonds
  • ¾ cup Greek yogurt
  • 2 teaspoons honey
  • 1 ½ teaspoons lemon juice
  • 1 ½ teaspoons curry powder
  • salt and ground black pepper to taste

  1. Mix everything and chill for one hour.
  2. You can amp up the curry if you want to, but watch how much!
  3. Also, you can go half and half with the Greek yogurt, substituting half with light mayonnaise.
  4. This recipe would go for two meals for three people easily!
