- 1 pound cooked chicken breast, chopped
- 2 stalks celery, chopped
- ½ cup sliced almonds
- ¾ cup Greek yogurt
- 2 teaspoons honey
- 1 ½ teaspoons lemon juice
- 1 ½ teaspoons curry powder
- salt and ground black pepper to taste
- Mix everything and chill for one hour.
- You can amp up the curry if you want to, but watch how much!
- Also, you can go half and half with the Greek yogurt, substituting half with light mayonnaise.
- This recipe would go for two meals for three people easily!
