This is used mostly for breakfast or brunches but it could be served as a lunch or dinner as well.
- 1/2 pound lean ground turkey breast
- 1/2 red bell pepper, diced
- 1/2 cup diced onion
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 4 egg whites
- 3 eggs
- 1/4 cup skim milk
- 1 teaspoon dry mustard
- 1/2 teaspoon garlic powder
- 2 cups spinach
- Preheat oven to 375 degrees F.
- Coat an 8- x 8-inch baking dish with cooking spray.
- Coat a skillet with cooking spray and cook over medium heat the turkey, bell peppers, onions, salt, and black pepper for 4-5 minutes, or until turkey is no longer pink.
- Set aside.
- In a large bowl, whisk the egg whites, eggs, milk, dry mustard, and garlic powder.
- Stir in spinach and meat mixture.
- Pour into baking dish.
- Bake 30-35 minutes, or until egg is set.
- Cut into squares and serve immediately.
You could make a nice Hollandaise sauce to serve over it. I would also add fruit or a salad (if having for dinner) on the side.
