Egg White Casserole

 serves 4

This is used mostly for breakfast or brunches but it could be served as a lunch or dinner as well.

  • 1/2 pound lean ground turkey breast
  • 1/2 red bell pepper, diced
  • 1/2 cup diced onion
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 egg whites
  • 3 eggs
  • 1/4 cup skim milk
  • 1 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 2 cups spinach

  1. Preheat oven to 375 degrees F. 
  2. Coat an 8- x 8-inch baking dish with cooking spray.
  3. Coat a skillet with cooking spray and cook over medium heat the turkey, bell peppers, onions, salt, and black pepper for 4-5 minutes, or until turkey is no longer pink. 
  4. Set aside.
  5. In a large bowl, whisk the egg whites, eggs, milk, dry mustard, and garlic powder. 
  6. Stir in spinach and meat mixture. 
  7. Pour into baking dish.
  8. Bake 30-35 minutes, or until egg is set. 
  9. Cut into squares and serve immediately.

You could make a nice Hollandaise sauce to serve over it. I would also add fruit or a salad (if having for dinner) on the side.
