Hamburger soup has been around for a long time. During WW2 when beef was scarce, this soup went a long way to feeding a family. Served with some homemade bread it kept you warm on a cold night!
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 1 cup thinly sliced carrots
- 1 cup sliced cabbage
- 1/2 cup thinly sliced celery
- 3 cups low sodium, fat-free beef broth
- 1 cup water
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
- In a soup pot over medium-high heat, cook ground beef and onion for 6 to 8 minutes or until meat is browned.
- Add carrots, cabbage, and celery, and cook for 5 minutes.
- Add remaining ingredients, bring to a boil, reduce heat to low, and simmer for 25 to 30 minutes, or until vegetables are tender.
