Broiling an open-faced sandwich was all the rage in the 40s, 50s and 60s. It made for a nice winter or fall hot lunch, especially if served with some warm soup! But it could be served as a meal as well, with a salad on the side and some kind of light dessert it was a world of yum!
- 4 servings
- 4 slices whole wheat bread, toasted
- 4 teaspoons reduced-fat garlic herb cheese spread *
- 1/2 pound sliced deli low-salt turkey breast
- 1 tomato, sliced
- 2 teaspoons bacon bits
- 4 slices reduced-fat mozzarella cheese
- Preheat oven to broil.
- Place toasted bread on a baking sheet.
- Evenly spread each slice of bread with cheese spread, then layer with turkey, tomato slices, and bacon bits. Top each with a slice of cheese.
- Broil 2 to 3 minutes, or until cheese is melted.
- Serve immediately.
*Make your own by using reduced-fat cream cheese and adding in dry or fresh chopped herbs- you need the cream cheese to be at room temperature.
