Creamy Italian Chicken

 This couldn't be easier OR healthier! The original recipe called for the heavy stuff but we've healthified it! 

  • 3 boneless, skinless chicken breasts (3 oz each
  • 8 oz block lower-fat cream cheese (Neufchatel) 
  • Can of condensed unsalted cream of chicken soup
  • A packet of dry Italian dressing mix (or use the Memaws version) 

  1. Cook on low for 6 hours (check to make sure the chicken is cooked!)
  2. Remove the chicken and shred and return to mix back in.
  3. Serve over toast, spaghetti, rice or even stuffed in corn tortillas!
