I love Boston Baked Beans (not so much the canned stuff). Here's the traditional version. My Dad would make these for us in the winter, serving them with a hamburger patty or some baked chicken. This recipe makes 10-12 servings.
- 2 lb navy beans
- 9 cups water
- 3 tbsp dry mustard
- 5 tsp salt (may lower or omit)
- 1/4 tsp pepper
- 1/2 cup brown sugar (I like dark)
- 1/2 cup molasses
- 3 tbsp vinegar
- 1 large sliced onion
- 3/4 lb salt pork (can sub with thick bacon)
- Soak the beans in the water overnight and cook until done using method of choice.
- Combine the mustard, salt, pepper, sugar, molasses, vinegar, and chili sauce (if you like).
- Add to the beans and stir
- Pour into a lightly greased baking dish
- Cut the salt pork into thick slices (or bacon) and with water*
- Snuggle the pork into the beans and lay the onion on top.
- Bake, covered, for 3 hours at 350
- Remove the top, turn the oven up to 425, and bake another half hour, or until crusty on top but not burned.
*This entails pouring very hot water over the pork in a bowl, emptying it, and repeating at least two times (dry the pork off before using).
