Hot cakes are an old-fashioned pancake based on early American recipes. You make these SMALL (a hair bigger than silver dollar size). They're a cheap and delicious grab-n-go snack and great with peanut butter!
- 3 eggs, separated
- 3 tbsp melted butter
- 1 tbsp sugar
- 1 tsp baking soda
- 1 1/2 cups flour
- 1/2 tsp salt
- 1 2/3 cups well-shaken buttermilk
- 1 tsp baking powder
- Beat the yolks on high until lemony in color
- Beat in the melted, cooled butter and sugar
- Sift the flour with the baking soda, powder and salt
- Beat into the yolks and butter mixture, slowly adding in the buttermilk on a low speed
- Beat the egg whites until stiff and fold in by hand
- Cook on a griddle.
