Almond Flour Crackers

 For those watching carbs crackers can become something off limits. Until you try making them out of Almond flour. Its important to use flour, not almond meal. If you accidentally buy a meal (its courser) you can spread it on a sheet pan and, on very low heat, toast it until dry, cool it to room temperature, then process it to a fine flour.

  • 1 1/4 c. Almond flour
  • 1/4 tsp baking soda
  • 1/2 c. grated cheese of choice (the finer the grate, the better the cracker)
  • 1 1/2 tbsp neutral oil (like canola)
  • 1 large egg

  1. Mix the flour, baking soda and cheese.
  2. Whisk the oil and egg
  3. Combine the wet with the dry to form a dough
  4. Roll between 2 sheets of parchment paper on a tray and cut into 2" squares,
  5. Bake at 350 for ten minutes or until crispy
