Long Island Potato Soup

  • 2 tbsp butter
  • 2 tsp chopped onion
  • 2 tsp minced parsley
  • 2 tsp chopped celery
  • 1/2 tsp salt
  • 1/8 tsp white pepper
  • 3 potatoes, diced
  • 1 quart boiling water
  • 1 tbsp flour

  1. Heat 1 tbsp butter; add onion, celery, salt, and pepper, and simmer for 10 minutes
  2. Add potatoes, cover, and cook for 2 minutes
  3. Add water and boil for 1 hour
  4. Add more boiling water as it evaporates
  5. Brown the flour and mix with remaining butter
  6. Add about 1 c potato liquid and cook until thickened, stirring constantly
  7. Combine mixtures and serve hot with croutons.
