Long Island Potato Soup
- 2 tbsp butter
- 2 tsp chopped onion
- 2 tsp minced parsley
- 2 tsp chopped celery
- 1/2 tsp salt
- 1/8 tsp white pepper
- 3 potatoes, diced
- 1 quart boiling water
- 1 tbsp flour
- Heat 1 tbsp butter; add onion, celery, salt, and pepper, and simmer for 10 minutes
- Add potatoes, cover, and cook for 2 minutes
- Add water and boil for 1 hour
- Add more boiling water as it evaporates
- Brown the flour and mix with remaining butter
- Add about 1 c potato liquid and cook until thickened, stirring constantly
- Combine mixtures and serve hot with croutons.
