- 2 lb pork shoulder roast
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp cumin
- 5 cloves garlic, minced
- 1 tsp oregano
- 3 bay leaves
- 2 c chicken stock
- 2 tbsp lime juice
- 1 tsp lime zest
- 12 6" white corn tortillas
- Place the meat in the crock
- Mix together the salt, pepper, cumin, garlic, and oregano
- Rub into the roast
- Place bay leaves around the roast and pour in the chicken stock around it, carefully
- Cover and cook on low for 10-12 hours
- Remove the roast with a slotted spoon along with the bay leaves
- Shred the pork and then place back into the crock and stir
- Add the lime juice and zest and stir.
- Serve with the tortillas.
