Serves 4
- 4 boneless, skinless chicken breasts
- 1/3 cup Dijon mustard
- 1/4 cup honey
- 2 tbsp whole grain mustard
- 2 tbsp soy sauce
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tbsp cornstarch + 2 tbsp water (optional, to thicken the sauce)
- Fresh parsley, for garnish
- Place the chicken breasts in the slow cooker.
- In a bowl, whisk together the Dijon mustard, whole grain mustard, honey, soy sauce, garlic, olive oil, smoked paprika, onion powder, thyme, salt, and pepper.
- Pour the sauce evenly over the chicken.
- Cover and cook on low for 5–6 hours or high for3–4 hours
For a thicker glaze, remove the chicken and stir the cornstarch slurry into the sauce.
- Cover and cook on HIGH for 10–15 minutes until thickened.
- Return the chicken to the slow cooker and spoon the sauce over the top.
- Garnish with fresh parsley and serve warm.
