Pork Tenderloin with Roasted Carrots and Green Beans

Per serving: approximately 400 calories, 42 g protein, 15–18 g net carbs

  • 1½ lb pork tenderloin
  • 3 cups green beans
  • 3 cups carrots, cut into small pieces
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp cinnamon
  • Salt and pepper

  1. Heat oven to 400°F.
  2. Season pork with garlic, Italian seasoning, salt and pepper.
  3. Place pork on a baking sheet.
  4. Toss carrots and green beans with olive oil and seasonings.
  5. Roast vegetables alongside pork.
  6. Cook pork until the center reaches 145°F.
  7. Rest 5 minutes before slicing.
