This cake has that 1800s appearance and flavor. Easy to make, using healthy ingredients!
- 2 unpeeled large apples, cored and chopped
- 1/2 cup water or apple cider
- 1 cup oats
- 1 large, very ripe banana, well mashed
- 2 eggs
- 1 tsp cinnamon
- 1 tbsp baking powder
- pinch salt
- 1/2-3/4 cup raisins
- Preheat oven to 350
- Butter a large cake pan (3-4" high spring pan works well)
- In a blender, blend the cut up apples, water until smooth
- Remove to a bowl and mix in the oats and banana
- Add in the eggs, cinnamon, baking powder, salt and raising
- Bake for 40 minutes or until done as per toothpick test
- Allow to cool to room temperature before removing
- Dust with sugar powder
