Easy Healthy Cake

 This cake has that 1800s appearance and flavor. Easy to make, using healthy ingredients!

  • 2 unpeeled large apples, cored and chopped
  • 1/2 cup water or apple cider
  • 1 cup oats
  • 1 large, very ripe banana, well mashed
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tbsp baking powder
  • pinch salt
  • 1/2-3/4 cup raisins 

  1. Preheat oven to 350
  2. Butter a large cake pan (3-4" high spring pan works well)
  3. In a blender, blend the cut up apples, water until smooth
  4. Remove to a bowl and mix in the oats and banana
  5. Add in the eggs, cinnamon, baking powder, salt and raising
  6. Bake for 40 minutes or until done as per toothpick test
  7. Allow to cool to room temperature before removing
  8. Dust with sugar powder
