Easy Slow Cooker Chicken and Vegetable Soup
- 2 boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1 cup chopped spinach
- Place the chicken, broth, carrots, celery, onion, garlic, thyme, oregano and pepper in the slow cooker.
- Cook on low for 6 hours.
- Remove the chicken, shred with a fork and return it to the slow cooker.
- Stir in the spinach and cook for another 30 minutes.
- Serve warm.
