Easy Slow Cooker Chicken and Vegetable Soup

  • 2 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 cup chopped spinach

  1. Place the chicken, broth, carrots, celery, onion, garlic, thyme, oregano and pepper in the slow cooker.
  2. Cook on low for 6 hours.
  3. Remove the chicken, shred with a fork and return it to the slow cooker.
  4. Stir in the spinach and cook for another 30 minutes.
  5. Serve warm.
