Crock Pot Creamy Chicken and Rice
- 1 lb chicken breast
- 7 cups chicken broth
- 1 cup wild rice blend
- 4 cloves garlic minced
- 1 onion small, diced
- 4 carrots medium, chopped
- 3 celery stalks chopped
- 8 oz baby bella mushrooms thinly sliced
- 2 tsp thyme dried
- 1/2 tsp poultry seasoning
- 2 5.4 oz cans coconut cream
- Place all ingredients except coconut cream into a slow cooker.
- Cook on high for 4 hours (or on low for 8 hours)
- Remove chicken and shred.
- Return to slow cooker and add coconut cream.
- Stir to combine and serve.
