Crock Pot Creamy Chicken and Rice

  • 1 lb chicken breast 
  • 7 cups chicken broth 
  • 1 cup wild rice blend
  •  4 cloves garlic minced
  •  1 onion small, diced
  •  4 carrots medium, chopped 
  • 3 celery stalks chopped 
  • 8 oz baby bella mushrooms thinly sliced 
  • 2 tsp thyme dried 
  • 1/2 tsp poultry seasoning
  •  2 5.4 oz cans coconut cream

  1. Place all ingredients except coconut cream into a slow cooker. 
  2. Cook on high for 4 hours (or on low for 8 hours)
  3.  Remove chicken and shred. 
  4. Return to slow cooker and add coconut cream. 
  5. Stir to combine and serve.
