The day of the Deli is gone, sad to say. With but rare exception the national chains have chased out the family-run delicatessens that used to bless almost every city in America.
The old-time deli was a place to gather and talk, do business deals, or grab a quick lunch with friends. Most delis were Kosher- or made kosher available- and often run by Jews who knew how to keep the cheese and meat separate until a goy orders a specialty sandwich with cheese.
Today, if you want a simple deli sandwich, you need to make it yourself. Of course, you're going to have to do a little work or you'll have to find lower-sodium meats and cheeses if you're sodium restricted. But it's worth it in the end.
This Simple Deli Sandwich is diabetic safe and serves 1 person so you'll have to change it out for more people.
- 2 slices of your favorite bread (the grainier the better!)
- 1 tbsp light mayonnaise
- 1 tbsp spicy or grainy mustard
- dried oregano or another Italian seasoning to taste
- 4 ounces of turkey meat (sliced, from either homemade or rotisserie but not the stuff in the meat case at the store)
- 2 slices provolone cheese or Swiss cheese
- lettuce
- 3 sliced tomato
Mix the mayo, mustard, and seasons and spread on both sides
Assemble and cut in half and eat!
