Memaws simple meatloaf

Sometimes Mama made meatloaf. When she did, it was served with mashed potatoes, brown burnt gravy, and a side vegetable.  And while most kids bemoaned meatloaf night, we really liked it. Dad upped the ante with his own version of things by adding in stuff like bacon later on, but I preferred Mom's version the best.

  • 2 lb ground chuck
  • 3 eggs
  • 1/2 cup of well-seasoned bread crumbs
  • 1 tsp fresh thyme (or more if you like)
  • 1/2 cup small diced onion
  • 1/2 cup finely chopped green bell pepper
  • 2 tbsp Worcestershire sauce
  • salt and pepper to taste

the glaze:

  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp dijon mustard
  • 1/2 tsp Worcestershire sauce

  1. Mix together the glaze.
  2. Mix all the ingredients for the loaf without overmixing. 
  3. Place in a greased loaf
  4. pan or shape on a kitchen tray.
  5. Spoon glaze over top and bake for 60 minutes at 350 degrees.
  6. Line a baking tray with foil and spray
