I very embarrassingly announce that this is my creation. One day I was trying out a way to use up as much of my pantry as possible. I peeked in and the canned goods were, well interesting. I was also trying to use up the remaining homemade lower-sodium sausage patties, tater tots, and the American cheese leftover from another meal.
This is not very healthy, I admit. BUT if you make a lot of it for, say a church social or something, that isn't so bad.
The notes to lighten it up are included.
- 1 can pork and beans in tomato sauce (if there's a lower sodium product, buy it)
- 6 slices American cheese (sub with reduced-sodium or swiss cheese)
- 6 sausage patties, crumbled (ready cooked turkey is fine)
- 1/2 package frozen tater tots (you really cannot sub this one out, sorry! And no, cauliflower will not work!)
- Spray a casserole.
- Place the tater tots on the bottom
- Pour the pork and beans over the tots
- Place the crumbled sausage over the tater tots
- Bake at 400 degrees for 1/2 hour.
- Pull out and top with the cheese and place back in for 10 minutes to melt.
Serve.
