Cheese puffs were one of those 1970s appetizer treats women took pride in making and serving. Not like they were complex but the flavor was cheesy and who doesn't love cheese? The 1970s cocktail parties ran the gamut from very dressy to extremely casual. It was expected though that some kind of tidbits would be available. Along with something to drink- usually alcohol but not always. And if you had a larger home, you might roll the carpet up for some dancing, too!
- 1 stick butter, softened (room temp)
- 2 cups Cheese, shredded & room temp cheddar, smoked gouda, pepper jack)
- 2 cups all-purpose flour
- 1/2 tsp Paprika
- 1/4 tsp Salt
- 1/4 tsp Cayenne *optional*
- Heat oven to 350°.
- Mix it all into a dough and roll into 1-inch balls. place onto a parchment-lined baking sheet 2 inches apart.
- Bake 12 – 15 minutes at 350°.
