Cucumber Sandwiches

Ladies in the 1950s would make this in large amounts and cut it out with cookie cutters or divide the bread into quarters, usually minus the crust. Of course, they weren't piled high and neither was this sandwich. You can change things up a bit as well. 

I chopped up some dried tomatoes in oil and mixed them in with the cream cheese, spread it on both sides of the bread, and added some alfalfa sprouts for texture. 

This particular recipe is for one person but it's easy enough to double or triple.

Servings:1

  • 2 ounces cream cheese, at room temperature *
  • 1 tablespoon Greek yogurt 
  • 1 tablespoon sliced fresh chives
  • 1 tablespoon chopped fresh dill
  • ¼ teaspoon ground pepper
  • 2 slices of whole-wheat sandwich bread (pumpernickel works well too!)
  • ⅓ cup thinly sliced English cucumber

  1. Stir cream cheese, yogurt, chives, dill, and pepper together in a small bowl until well blended. 
  2. Spread the mixture evenly on one side of each bread slice. 
  3. Top 1 slice with cucumber slices, then top with the other bread slice, cream cheese-side down.
  4.  Cut the crusts from the sandwich and cut it in half diagonally.
  5. Serving Size: 1 sandwich

* to lower the fat, try using Neufchâtel cream cheese. 


❀ Cucumber and Tomato Sandwich❀ 

(makes one)

  • 2 ounces cream cheese, at room temperature
  • 1 tablespoon low-fat plain strained (Greek-style) yogurt
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon finely chopped fresh dill
  • 1/4 teaspoon ground pepper plus 1/8 teaspoon, divided
  • 2 slices whole-wheat sandwich bread
  • 1/3 cup thinly sliced English cucumber
  • 1 small tomato, cored and cut into 1/4-inch slices
  • 1/8 teaspoon salt

  1. Stir cream cheese, yogurt, chives, dill and 1/4 teaspoon pepper together in a small bowl until well blended. 
  2. Spread the mixture evenly on 1 side of each bread slice. 
  3. Arrange cucumber slices and tomato slices in an even layer over the cream cheese mixture on 1 bread slice; sprinkle with salt and the remaining 1/8 teaspoon pepper. 
  4. Top with the remaining bread slice, cream cheese-side down. 
  5. Cut the sandwich in half diagonally.
