Chicken Dijon

If you want a bit of spice and something to adhere your breadcrumbs to the chicken breast without extra work, this is it. This is a very easy dish that offers 8 servings, so you could make and freeze it for a later date. Just make sure you place them in a toaster oven or air fryer to "toast" up.

  • 1/2 (8 oz) plain, unflavored, low-fat yogurt
  • 1/4 cup Dijon mustard
  • 1/2 cup breadcrumbs
  • 8 3oz chicken breast halves, boneless and skinless

  1. Preheat the oven to 400 degrees.
  2. Combine the yogurt and mustard.
  3. Pat the breasts dry and trim off extra fat.
  4. Brush breasts on both sides with the mustard yogurt sauce, and dredge in bread crumbs.
  5. Arrange on a sprayed baking dish, cover, and bake at 400 for 30 minutes.
  6. Increase temperature to 450 and bake uncovered for 15 more minutes or until done to 165 degrees.
