- 1/2 (8 oz) plain, unflavored, low-fat yogurt
- 1/4 cup Dijon mustard
- 1/2 cup breadcrumbs
- 8 3oz chicken breast halves, boneless and skinless
- Preheat the oven to 400 degrees.
- Combine the yogurt and mustard.
- Pat the breasts dry and trim off extra fat.
- Brush breasts on both sides with the mustard yogurt sauce, and dredge in bread crumbs.
- Arrange on a sprayed baking dish, cover, and bake at 400 for 30 minutes.
- Increase temperature to 450 and bake uncovered for 15 more minutes or until done to 165 degrees.
