Cheese Toast

This can make 4 or 2 servings, depending on how hungry people are! My guys LOVE this open-face sandwich. At first, hubby thought the mixture sounded weird until he ate it and he discovered a world of yummy! We use larger slices of bread (the Pepperidge Farm size) at one slice per person with a light salad and some fruit. Can you lighten it? YES! I've included the subs to lighten it up. In the photo, I served it with carrot sticks, a little hummus, and some spinach dip.

  • 1 tablespoon salted butter (not margarine) [or I CAN'T BELIEVE it's NOT BUTTER]
  • 4 slices bread 
  • 8 ounces of your favorite cheddar cheese, shredded (about 2 cups) [or Swiss cheese]
  • 1 teaspoon whole-grain mustard
  • 1 tablespoon mayonnaise [or miracle whip]

  1. Preheat oven, or toaster oven to 450ºF.  
  2. Butter the top sides of the bread and place on a baking sheet. 
  3. Bake for 3 minutes, or until the butter is fully melted.
  4. Combine the cheese with mustard and mayonnaise and mix well.  
  5. Remove the bread from the oven once the butter has melted, and top it with the cheddar cheese mixture. 
  6. Return to the baking sheet to the oven and cook until bubbly and golden, approximately 5-10 minutes. 

A toaster oven tends to cook faster than a regular oven so be sure to check intermittently.
