this serves 3-4 people
Carrot salad was a favorite at church events when I was growing up. And of course, everyone had their version to go by. This is probably the easiest and healthiest version and I hope you enjoy it!
- 1.5 tbsp mayonnaise
- 1.5 tbsp coarse mustard
- 1.5 tbsp apple cider vinegar
- 1.5 tbsp honey
- 1/4 tsp salt
- dash tsp pepper
- 1-10oz bags of matchstick carrots [note: cut them down a little!]
- 1/2 red or green apple cut into matchsticks
- 1/4 cup toasted, chopped pecans
- 1/4 cup raisins
- 1 tbsp chopped fresh parsley
Stir the wet items together and add the rest of the ingredients.
Cover and chill for one hour or overnight.
