Ambrosia Fruit Salad

 A popular dish in the 70's, this fruity and sweet salad has fallen by the wayside. But I think a revival is in order and once people try it, they fall in love with it. And it's very easy to make, too!

  •  1 8oz container thawed whipped topping (sugarfree is okay)
  • 2 1/2 cups shredded sweetened coconut *
  • 1/2 cup chopped walnuts
  • 1 8oz can fruit cocktail, well-drained (packed in own juice, or rinse if need be)
  • 1 8oz can pineapple chunks, well-drained
  • 1 11oz can drain mandarin oranges (in own juice)
  • 1 10oz jar drained maraschino cherries (drained and cut up)
  • 1 tsp each nutmeg and cinnamon

Mix all together and cover, chill for 30-45 minutes or overnight.

NOTE: if you're going to be serving it the next day, you may want to make your own whipped cream.

* You could use unsweetened but it doesn't have the same outcome. I recommend using regular coconut and going for the sugar-free whipping cream.

NOTE I added in blueberries for color contrast.
