This is a very healthy recipe that you can use in your air fryer, fry in light olive oil, or bake, its up to you!
- 1 small eggplant cut into chunks around 2" in length
- 1 egg and 1 tbsp water, whisked
- 1 cup panko bread crumbs
- 3 tbsp shredded parmesan cheese
- 1 tsp italian seasoning mix
- 1-2 tbsp flour
- Make sure to take the skin off the eggplant before cutting into chunks
- Roll first in flour and shake off excess
- Roll in the egg wash and then dip into the crumbs, cheese and Italian seasoning mix
- Place in freezer until frozen through for air frying and follow air fryer directions.
- The other ways can be cooked as you would any other bakes or fried, fried food.
