Vegan Split Pea Soup

  • 1 lb split green peas, sorted and rinsed well
  • 2 quarts vegetable broth
  • 2 cups water
  • 1 large chopped onion
  • 2 cloves minced garlic
  • 3 chopped celery ribs
  • 2 bay leaves (optional)
  • salt and pepper to taste

  1. Combine everything in your slow cooker and cook for 5-6 hours or until peas are very soft.
  2. Remove bay leaves
  3. Cream with an immersion blender
