This recipe comes from Cooks Country and it's so puckeringly good I just have to share it. Where would we be without Cooks Country? I hope they don't mind my absconding it too much!
The Crust
- 1 cup flour
- 1/4 cup sugar
- 1/2 tbsp table salt
- 8 tbsp melted, cooled butter
- Mix together the ingredients and pat into a prepared 8x8 baking pan.
- [Prepare pan by cutting 2 sheets of foil and lay them as a sling into the pan and lightly spray]
- Bake at 350 degrees for 19-24 minutes until golden brown (watch closely! Not too dark!
The Fill
- 2/3 cups fresh lemon juice
- 2 tsp fresh lemon zest
- 2 tsp cream of tartar
- 1 cup granulated sugar
- 2 tbsp flour
- 1/4 tsp salt
- 3 whole large eggs
- 3 egg yolks
- 4 tbsp unsalted butter
- Mix together the Cream of Tartar, Granulated sugar, 2 tbsp flour, and salt.
- Add in the eggs (all of them).
- Whisk together and add the juice and zest and whisk in a saucepan on medium-low heat constantly until the pudding thickens and reaches 160 degrees (about 5-8 minutes).
- Remove from heat and add the butter and stir to melt.
- Strain to remove lumps.
- Pour the mixture into the crust
- Place back into the oven and bake for 10-15 minutes or until set and starting to pull away at the sides a little.
- DO NOT BROWN!
- Let cool for at least 1 hour to room temperature before placing in the fridge to chill (do not cover!)
- Remove and unsling and cut.
